2022 Estate Cabernet Sauvignon

Calcareous Vineyard was founded upon the idea, first and foremost, of growing exceptional Cabernet Sauvignon. The perfect combination of soil and climate allow our site to play to both the fruit and structural elements of the varietal, allowing us to produce one of our regions great examples of this most noble cultivar.

Tasting Notes
Exudes rich notes of ripe blackberry, baking spices and pencil shavings. The palate is full of dried bing cherries, saddle leather and grilled meat. The tannins are silky and rich and combine with hints of French oak to create a lingering finish that doesn't overpower.

Vineyard Notes
The bulk of our Estate Cabernet Sauvignon comes from our Block 2, the largest block on our Estate, with smaller amounts of Block 7 and Block 17 blended in. The 2022 Vintage ripened very early, and produced extremely low yields for Cabernet. We produced well under 1 ton per acre on our Cabernet blocks as the clusters were smaller than usual and the berries tiny. Although these small berries produced low yields, they make up for it with a huge skin to juice ratio making the 2022 Estate Cabernet one of the most full bodied and powerful Cabs were have ever produced.

Production Notes
All grapes were hand harvested and 100% de-stemmed with no crushing of the skins. The whole berries were placed in open top 4.5 ton concrete tanks and fermented with twice daily pump overs for 9 days. As the ferments approached dryness, we switched to more gentle, reductive punch downs to extend the maceration process. After a total of 11 days on skins, the musts were pressed and all fractions combined to single blend and aged in 80% French Oak, 20% American Oak 228L barrels, 40% of which were new.
