Vineyard Notes
The bulk of our Estate Cabernet Sauvignon comes from our Block 2, the largest block on our Estate. 2021 marked these vines as 20 years old and as it is with Cabernet are only now coming to the proper age to produce the more intricate and complex character that makes truly world class Cab. The long windows of ripeness in the 2021 vintage allowed a few rows of the neighboring blocks of Cab Franc and Merlot to be picked the same day and co-fermented.
Production Notes
All grapes were hand harvested and 100% de-stemmed with no crushing of the skins. The whole berries were placed in open top 4.5 ton concrete tanks and fermented with twice daily pump overs for 9 days. As the ferments approached dryness, we switched to more gentle, reductive punch downs to extend the maceration process. After a total of 17 days on skins, the musts were pressed and all fractions combined to single blend and aged in 80% French Oak, 20% American Oak 228L barrels, 35% of which were new.
Food Pairing Notes
The 2021 Estate Cabernet is purposelessly built for a ribeyes grilled over an oak fire. The interplay or fruit, tannin and toasted oak plays perfectly with marbled meat with just hints of smoke.
