2008 York Mountain Cabernet Sauvignon

Our York Mountain Cabernet has always been one of our showcase wines, and the 2008 lives up to its predecessors. The wine is intensely dark and young tasting, even after 29 months in barrel. This barrel time, plus an additional 4 months of bottle age have given this wine an amazingly heavy aroma that reveals itself after some decanting time. The flavors of cocoa, earth, and dark fruits supply a extremely dense palate. The tannins present again suggest another vintage that will easily allow 12-15 of additional aging to supply complexity.

Tasting Notes
Cabernet Sauvignon is really adapted well for dry years such as 2008. They flower late, ripen slowly and withstand any early fall heat by retaining their natural acidity well into the picking season. Warm dry years also aid in keeping yields low. With a reduced crop everything the vine has to offer is packed into fewer berries resulting in stunning density.
